Holiday Chocolate Pear Cake

This time of year, the holiday party invitations are flooding in, and you might want to host one yourself! We love nothing more than spending time with family & friends this time of year, making new memories and reliving the old ones!

 Being called on to make dessert for a party is no small task, and we take it VERY seriously. We suggest you use the recipe below and really get all the rave reviews from guests. It's a winner, winner!



1 1/8 cups unsalted butter 

3/4 cup white sugar 

4 eggs

1/2 cup dark chocolate coating wafers, melted 

1 tsp baking powder 

1 1/2 unbleached occident flour 

1/4 cup cocoa powder

2/3 cup whole milk

4 large pears



1 cup dark chocolate coating wafers

1/2 cup heavy cream

1 Tbsp sugar

1 Tbsp light corn syrup

1/4 cup unsalted butter




Preheat oven to 350. Melt the butter, whisk in sugar for 2 minutes. On low speed, gradually add in eggs one at a time. Add the melted chocolate.

 In a separate bowl, whisk together the flour, baking powder, cocoa powder and a pinch of salt. Combine well and add 1/3 of dry mix to wet mixture. Keep adding until all dry ingredients are well incorporated. Pour in the milk and whisk once more. 

Grease the loaf pan and line with parchment paper. Arrange the pears in a line, leaving a bit of space between each pear. Pour the chocolate cake mixture between the pears and fill up the sides. Bake for 1 hour. Cool in pan until slightly warm. 


 Bring the cream, sugar and corn syrup to a boil over a moderately low heat, whisking until sugar is dissolved. Remove the pan from heat and add the chocolate, whisking until the chocolate is melted. Cut the butter into pieces and add until melted as well. Cool in a refrigerator until ganache is thickly spreadable. Pour over cake and serve!
